You can usually catch us at one of Sussex County’s numerous Summertime farmers’ markets, where we look forward to getting to know each of our customers’ keen tastes and preferences. As well, our steaks and ground beef are featured in some of the state’s top restaurants, so keep an eye out as you dine out!
We Our Cattle
Our cattle are the product of a genuine dedication to genetic perfection – resulting in superior marbling, top quality taste, and an overall stand-out customer experience. We rely on artificial insemination (AI) and embryo transfer (ET) for a seamless and safe conception. From there, we implement emerging technologies like DNA testing and ultrasound, and provide only necessary vaccinations to newborn calves at birth. Upon weaning, our cattle are initially 100 percent grass-fed with top-quality Sudangrass – which is known for its high-caliber nutritional content and natural weed-deterrent qualities (eliminating the need for caustic chemicals on our fields!). Finally, the herd is finished on grain for the final 5-6 months, including wheat, barley, corn, and even brewer's’ grain from some of the top local microbrews.
Dry-aged to Perfection
When it comes to perfecting our product, we take it to its natural conclusion. All of our beef is dry-aged in refrigeration temperatures for 21 days to allow for enzymatic and biochemical processes to take hold. What does this mean? For the consumer, it means a more succulent and tender product with an unparalleled flavor requiring very little enhancements.
As further explained by the Center for Research & Knowledge Management of the National Cattlemen’s Beef Association,
“[d]ry-aging beef to enhance its flavor and tenderness is used by a very small number of meat purveyors for upscale hotels and restaurants and by an even smaller number of retailers for the gourmet market….and may be more art than science.”
What they don’t know, however, is that Reid Angus beef – through perfecting its systems and processes – has made this delicacy readily accessible to the Delmarva consumer, and we look forward to helping you bring the steakhouse home!
